What’s more classic than holiday eggnog?   This adapted dairy free spiced eggnog recipe allows kidney patients to enjoy without worry!   High phosphorus ingredients have been replaced with nondairy, reduced phosphorus alternatives to enable you to enjoy this rich, creamy treat this holiday season! Paired with the low sodium holiday cheese ball recipe this makes for a great evening for your guests.

Dairy Free Spiced Eggnog

Ingredients:

2 cups liquid nondairy creamer

¾ cup low cholesterol egg product

¼ cup sugar

2 teaspoons rum extract

½ teaspoon pumpkin pie spice

¼ teaspoon nutmeg

6 tablespoons nondairy whipped topping

Preparation:

1. Combine nondairy creamer, egg product, sugar, rum extract, and pumpkin pie spice in a chilled blender for 1-2 minutes.

2. Serve with nondairy whipped topping and a sprinkle of nutmeg.

Nutritional Information:

Per ½ cup serving: 185 calories, 3 gm protein, 74 mg potassium, 60 mg phosphorus
